The show is joined by Miyoko Schinner, author and host of PBS’s show, Vegan Mash Up.
Host Karena Thek discusses with Miyoko Schinner about her most recent book, Artisan Vegan Cheese, a book full of her secrets for making homemade non dairy cheeses that retain all the complexity and sharpness of their dairy counterparts while incorporating nutritious nuts and plant-based milks.
On having a dairy based vegan diet, Miyoko says, “in 70 studies, more milk and dairy causes an increase in hip fracture and osteoporosis.”
“There is one ingredient when working with vegan dairy and cheeses, it’s called patience.”
Miyoko teaches classes around the world, and also has a youtube channel that offers tips, lessons, and vegan recipes.
“The number of people eating vegan has doubled within the last year.”
With Earth Day having recently passed on April 22, Miyoko gives her message on how to make a change on an individual level.
“People are waking up to a whole new way of eating, and it’s going to keep going that way.”
Karina wraps up the show by giving some online resources for great vegan recipes and information, and talks about the work of T. Colin Campbell and his groundbreaking book, titled, The China Study.
