Culinary Arts Program Newest Hart District ROP

Popular new television programs have stimulated interest in the culinary arts, and the Wm. S. Hart Union High School District’s Regional Occupational Program has responded by introducing a new Culinary Arts class taught by former White House chef Louis Eguaras.

 

[view:node_ad=5]The class will teach the principles of food selection, preparation and evaluation and incorporates study of meal management, various cuisines and food presentation. Chef Eguaras will address the current industry focus on foods and nutrition, and students will have an opportunity to apply scientific cooking principles to a variety of products.

 

Students will be able to prepare a wide variety of foods, eat what they have prepared and critique the results. A faculty banquet is proposed as a final class project.

 

The class will meet at West Ranch High School on Mondays and Wednesdays from 3:30 to 8:30 p.m., starting Aug. 18 and running through Dec. 14. The class will take advantage of facilities and expertise offered by Chartwells, the Hart District’s food service provider, which also maintains its administrative offices at West Ranch.

 

Chief Eguaras started cooking at the age of 13 and graduated from the U.S. Navy Culinary Arts Academy before accepting an assignment at the Camp David Presidential Retreat and later the White House. He ran his own catering company in Southern California and helped College of the Canyons create its culinary arts program.

 

“The culinary arts industry has grown so much in the past ten years that there has been a great demand for high quality, highly skilled individuals to work in the industry and profession,” Eguaras said. That translates to a number of promising job opportunities for those with the interest and the training.

 

The new Culinary Arts class is available to high school students 16 years and older without charge and to adults on a space-available basis at nominal charge.
