Since 1977 we have been told that fat in our diet is what makes us fat, and that saturated fat was the worst kind of fat. And since then obesity rates have continuously risen in direct proportion to dietary fat reduction.

At the same time we were told to stop eating saturated fats and to switch to unsaturated, which we now know as dangerous ”trans” fats, we also were told to eat more carbohydrates, mostly made from grains. So the American grain industry had to change dramatically to keep up with the new demand.

The new corn and wheat varieties developed since then do not have the same nutritional content as their ancestral grains, and as the demand increased, the nutritional value declined in favor of producing more corn and wheat.

Today, most grains commercially produced in America are so lacking in nutrients, contaminated with chemicals and/or genetically modified that many other developed countries consider them dangerous and ban them from their food supplies.
