Hometown Recipes: Adobo Chicken Served With Hot Rice

Many times I get the best recipes from friends and family.  This recipe was given to me by my close friends Mary Claire and Jeff.  Jeff is Filipino-American.  Adobo is a common classic Filipino dish. 

There are many variations of adobo but this is MC and Jeff’s present to me.  It’s super easy and just delicious.  It gets better if you put leftovers in the fridge and eat it the next day!

Adobo Chicken Recipe

1/2 cup soy sauce

3/4 cup white vinegar

1 Tablespoon whole black peppercorns

2 bay leaves

6 cloves, smashed fresh garlic

5 pounds boneless skinless chicken thighs

Combine the soy sauce, vinegar, peppercorns, bay leaves and garlic in a pot.  Heat until boiling.  Add chicken and cook on medium-high until the chicken is tender, about 1/2 hour.  Take the chicken out and boil the remaining sauce on high until it is reduced and slightly thickened. 

Strain out the peppercorns, bay leaves and garlic and serve with the chicken and some hot rice.
