Strawberry Cobbler Recipe: The Perfect Fourth Of July Dessert

With Independence Day coming up, what better way to celebrate the holiday than with the perfect light and sweet summertime dessert: strawberry cobbler? As part of KHTS Radio’s new recipe category, here is the full recipe and instructions for a dessert sure to complement a fireworks show this weekend. 

This recipe comes from the new KHTS Hometown Recipes category that aims to bring the freshest daily meals to your table.

For this recipe you will need: 

Berries: 

  • 1 pound fresh strawberries, hulled and quartered. 
  • ½ cup granulated white sugar
  • ½ cup water

Cobbler Crust: 

  • ¼ cup butter (half stick or softened)
  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • ⅛ teaspoon salt
  • ½ cup whole milk
  • 1 teaspoon good quality vanilla
  • ¼ cup reserved strawberry juice

Once you have collected all your ingredients, it’s time to get baking. The first step in the strawberry cobbler is preparing the berries. Do this by washing your strawberries and cutting them into quarter pieces. 

Place the berries in a bowl with the sugar and water. Keep the berries in the bowl for about 20 minutes to let it soften and release juices. Be sure to save ¼ cup of the juice left over. 

Now it’s time to get started on making that flaky, light crust. 

First cream together softened butter and sugar in a bowl. You can do this by using a mixer. 

In a separate bowl, sift together flour, baking powder and salt. In another bowl mix together milk and vanilla. 

It’s time to put all these ingredients together. Alternating between wet and dry ingredients, add the two bowls to the softened butter and sugar mix. Keep blending until all is incorporated and forms a thick batter. 

This recipe works best with a 9 x 9 inch pan. Make sure to butter or spray with non-stick spray before pouring the mix inside. Spread the batter around the pan to make sure it goes from edge to edge. 

Now time to grab those softened strawberries you prepared at the beginning. Pour those strawberries on top of the batter and spread them out a bit, making sure not to mush it into the batter. Pour the reserved strawberry juice on top. 

Bake in the oven at 375 degrees for 45 minutes or until the crust is golden brown. 

Remove and allow to cool. You can serve with ice cream or whipped cream to add to that delicious flavor. This summertime berry dessert will complement any barbecue party this holiday weekend.
