Light and just the right amount of tart, these key lime cookies from the KHTS Hometown Recipes category are a mouth-watering addition to your dinner table.
Ingredients
Cookies
- 2 3/4 c all-purpose flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/8 tsp salt
- 1 c butter
- 1 1/2 c sugar
- 1 egg
- 3-4 Tbsp lime juice or key lime juice
- 1 tsp vanilla
- zest of one lime
- green food coloring
Frosting
- 4 c powdered sugar
- ½ c butter
- 3-4 Tbsp line juice
Directions
- Cream butter, sugar, and egg. Add lime juice, lime zest, and vanilla to creamed mixture. Add food coloring until the desired color.
- Add dry ingredients and mix well
- Drop by tablespoon-full onto a lined baking sheet.
- Bake at 350 for 8-10 minus or until lightly browned
- For frosting, cream the butter. Add the powdered sugar and lime juice a little at a time. Add green food coloring if desired.
- Cookies may be frosted individually or turned into sandwiches. Enjoy!
